How to Grow Spring Onions from Kitchen Scraps in Water

Spring onions (scallions) are one of the most versatile ingredients in the kitchen, but they often end up half-used in the crisper drawer. Instead of throwing away the root ends, you can easily regrow them in water. It is a fun, zero-waste kitchen experiment that yields a continuous supply of fresh greens.

Here is the step-by-step guide to regrowing spring onions on your windowsill.

Step 1: Save the Roots

When using spring onions for cooking, cut the white bulbs about 2 to 3 centimeters from the root base. Do not throw away the hairy roots at the very bottom; this is where the regrowth starts.

Step 2: Set Up in Water

Place the root scraps upright in a small glass jar or cup.

  • Water Depth: Pour just enough room-temperature water to cover the roots, leaving the top opening of the bulb exposed to air. If you submerge the entire bulb, it will rot.
  • Placement: Put the jar on a bright, sunny window sill.

Step 3: Change Water Frequently

To prevent bacteria buildup and bad odors, change the water every single day. Rinse the roots gently if they accumulate slime. Within 24 to 48 hours, you will see fresh green shoots emerging from the center.

Step 4: Harvest Your Green Scallions

In about a week, your spring onions will grow back to their original size. You can snip off the green tops with scissors whenever you need them for a recipe, leaving the roots in the water to continue growing!
